In between entering contests, shopping for gifts and your fall gardening, how about some wonderful Pumpkin Bread baking in your oven? Here’s a great recipe you are going to love. And the bonus? This makes TWO loaves of delicious Pumpkin Bread. May we suggest, one for you to enjoy and one to share?  This recipe is moist and delicious. It’s perfect for breakfast or dessert. Perfect for all of our favorite customers, like you.

Pumpkin Bread

Ingredients

1 c.

Salad Oil

4

Eggs, lightly beaten

2/3 c.

Water

2 c.

Pumpkin, canned, such as Libby's

3 1/2 c.

All Purpose Flour

3 tsp.

Salt

1 tsp.

Nutmeg

2 tsp.

Baking SOda

1 tsp.

Cinnamon

3 c.

Granulated Sugar

1/2 c.

Walnuts or Pecans, chopped

1/2 c.

Raisins

Coarse, raw sugar for topping, about a Tbls., if desired

Directions

  1. Preheat oven to 350 F. Grease and flour two 9″ x 4″ loaf pans.

  2. Combine oil, eggs, water and pumpkin in a mixing bowl.

  3. In another mixing bowl, sift together the dry ingredients. Add the pumpkin mixture. Blend just until the dry ingredients are moistened.

  4. Stir in the nuts and raisins. Pour into the prepared loaf pans. Sprinkle with the raw sugar, if desired.

  5. Bake 1 hour or until a toothpick inserted in the center comes out clean.

  6. Yield: 2 loaves. Enjoy!!
